AGE is a toxin that appears when foods are fried, grilled, heated or pasteurized. AGEs can damage certain proteins in the body and the body tries to break these AGEs by using cytokines, which are inflammatory messengers. Where ever the AGEs occur there you find arthritis or inflammation. By reducing the amounts of foods cooked at high temperatures in your diet, you can help reduce the AGEs.
